MAKE CRUST

Combine the flour, cocoa powder, sugar, and salt in a big bowl. Add the cold butter cubes and pulse until mix together. Gradually add cold water, one tablespoon at a time, and mix until the dough comes together.

ROLL OUT THE DOUGH

Roll out the chilled tart dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess. Prick the bottom of the crust with a fork and line it with parchment paper.

Bake the crust. Remove the parchment paper and weights and bake for an additional 5-7 minutes.

In a saucepan, heat the heavy cream and milk until the mixture is warm. Add chopped chocolate and continue whisking oven the low heat until the chocolate ganache is beautiful and smooth.

Pour the dark chocolate ganache into the tart crust with raspberry jam and spread it evenly. Allow it to cool slightly. Refrigerate the tart.
