1. Gather ingredients

Prepare al ingredients on a table: 2 fresh eggs, 2 tbsp white wine or lemon juice, 2 tbsp water, 4 oz (100 g) butter.

2. Separate eggs

Separate the egg yolks from the egg whites. Store the whites in a glass jar in the fridge for another recipe.

3. Add egg yolks to saucepan

Add the egg yolks to a small saucepan with 2 tbsp of water, 2 tbsp of white wine or lemon juice, and whisk until well combined.

4. Add butter

Add 4 oz of soft butter to the egg mixture.

5. Make sauce

Place the small saucepan with the egg yolk mixture over a pan of hot water without allowing the water to touch the bowl. The steam will heat it.
Whisk the mixture constantly. As the butter melts, it will get a little frothy. Continue whisking constantly for about 3 minutes or until the mixture starts to thicken then immediately remove from heat. It should be thick enough. If it is too thick you can add a little bit of warm water and whisk it again.

6. Season Sauce

Season with salt and crushed pepper. Serve right away or cover to keep warm. If the sauce gets too thick, whisk in a teaspoon of luke warm water to loosen it up.
