Steps

1. Prepare all inredients

Gather all ingredients on a table.

2. Make crust

5 min

Combine the flour, cocoa powder, sugar, and salt in a big bowl.
Add the cold butter cubes and pulse until mix together.
Gradually add cold water, one tablespoon at a time, and mix until the dough comes together.
Turn the dough out onto a baking paper sheet, knead it a few times to bring it together, and then shape it into a disk.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

3. Roll out the dough

Preheat the oven to 375°F (190°C).
Roll out the chilled tart dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.
Prick the bottom of the crust with a fork and line it with parchment paper. Fill with pie weights. (I used lentils).

4. Bake

15 min

Bake the crust for 15 minutes. Remove the parchment paper and weights and bake for an additional 5-7 minutes, or until the crust is set. After the crust is done, leave it until the crust is cool approximately 15 minutes.

5. Prepare Chocolate Ganache

10 min

While the crust is baking, prepare the dark chocolate ganache. Chop chocolate into small pieces. In a saucepan, heat the heavy cream and milk until the mixture is warm. Add chopped chocolate and continue whisking oven the low heat until the chocolate ganache is beautiful and smooth. Stir until smooth and well combined.

6. Add jam and ganache

Transfer 1 cup of raspberry jam on top of chocolate crust. Pour the dark chocolate ganache into the tart crust with raspberry jam and spread it evenly. Allow it to cool slightly. Refrigerate the tart for at least 2 hours or until the ganache is completely set.

7. Decorate

Arrange fresh raspberries on top of the chocolate ganache in a circular pattern. Optionally, dust the tart with powdered sugar for a decorative touch.

8. Serve
