      Chop shrimp, spring onion, cilantro.

      Combine ingredients

      In a mixing bowl, combine mashed potatoes, eggs, chopped cilantro, chopped spring onion, chopped shrimp, flour, shredded mozzarella cheese, salt, and pepper.

      Take a portion of the mixture and shape it into croquettes. You can make them into cylindrical or oval shapes, as per your preference.
