Prepare pastry shell
Preheat your oven to 375°F (190°C).
Prepare the pastry shell in a pie dish according to package instructions if using pre-made.
Place parchment paper over the pastry shell and fill it with green lentils (or any other baking weights) to weigh it down.

Place the pie dish with the pastry shell and lentils in the preheated oven and bake for 10 minutes at 350°F (180°C).

While the pastry shell is pre-baking, in a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Dice Zucchini and asparagus.

Dice chorizo. Add diced chorizo sausage to the skillet.
In the same skillet, add diced zucchini and chopped asparagus. Cook for about 5 minutes until they are slightly tender. Season with salt and pepper to taste. Remove from heat and set aside.

In a mixing bowl, beat eggs. Add reduced-fat cream, milk and continue to whisk until well combined. Season with salt and pepper. Add cheese and mix again.
